Giovanni Menti winery is located in Gambellara (Veneto, Italy). It was founded in the late 1800’s. They have been applying biodynamic agriculture since 2004. In 2010, the company started to work in line with biodynamics which gave great quality results to all steps of production process.
In 2012, after ten years of membership in “Gambellara wine producer association”, they decided to leave and do not produce d.o.c. wines more.
The wine is made from hand-picked grapes, immediately pressed in the cellar. The fermentation is provided using only natural yeast in stainless steel tanks under controlled temperature. The second fermentation occurs in the bottle by addition of Albina must (from the dried Garganega grapes). The wine is bottles without adding sulphites.
Roncaie sui lieviti has a pearly yellow colour, with gold reflexes. In the mouth it’s fresh & fizzy, with notes of yellow fruits and yeasty brioche framed by delicate acidity and smoky minerality, due to the volcanic soil.
