The grapes harvested from Recaredo’s Serral del Vell Estate stands on a small plateau (serral) carved out of the Bitlles Valley Highlands on a mainly calcareous terrain. Harvesting is done completely by hand to maintain the properties of the grapes used for a long-aged wine and no chemical herbicides or insecticides are used. Only natural organic fertilizer.
This cava remains in the darkness of the caves for at least 8 years, until it achieves a truly unique character. Secondary fermentation and bottle aging is done exclusively with natural cork stoppers, the disgorging (the uncorking process) is done by hand without freezing the neck of the bottle, a technique based on skilled craftsmanship.
