🍇 70% Garnacha and 30% Tempranillo (Cencibel)
Carbonic maceration and spontaneous fermentation of the whole bunches in a small stainless steel tank. The grapes are pressed in the classical method: Lágrima: The lighter free flow wine is released from the tank. Corazón: Pressing due to the natural weight of the remaining grapes in the tank. The resulting wine is concentrated and complex. Only the corazón is used for making this wine. Malolactic fermentation is spontaneous an done in Amphorae (typical tinajas).
👀 Purple with a violet rim.
👃Intense, young and aromatic. Hints of wild strawberries, raspberries, and cherries.
👄 Fresh and youthful. 31 Noviembre is a fruit forward juicy red wine with soft tannins and pleasant acidity.
