The term symbiosis (from greek sun and bios, that means life together) indicates the relationship that develops between two individuals of different species, aimed at a mutual benefit or at least one of the partners, without the other will come to harm.
The project aims to grow a symbiotic viticulture and oenology in harmony with the environment, by reducing progressively in the vineyard and in the cellar all products of synthesis and/or potentially allergenic (no products of animal origin, GMOs and sulfur).
Pale lemon-yellow colour. Medium intensity aromas of bread, yeast and ripe green fruits. Off dry with medium (+) acidity and medium body. Flavours of peach, hints of quince and grapefruit, excellent and persistent bubbles. Really complex, well crafted sparkling wine.
